It's Loaded Meatball Time. YUM!
Welcome to our Kitchen - it’s LOADED MEATBALL time!
In a bowl combine the mince, egg, coconut flour, salt, pepper, cajun seasoning, Worcestershire sauce and garlic and mix until the the fats in the mince start to combine to ingredients. Roll into desired size balls and chill in the fridge for 10 minutes.
Heat up the oil in a frying pan. Add the capsicum, zucchini, mushrooms, onion and bacon and fry until the onion is transparent and the vegetables have softened. Remove from the pan and start to cook the meat balls. Cook until the outside is browned and the meat inside is cooked. Return the vegetables to the pan and heat.
In a bowl, place the meatballs and ole the vegetables on top. Cover with grated cheese and allow the cheese to melt with the heat. Serve with several forks to share or as a complete meal.
