Pre heat oven to 170C fan forced. Cream butter and sugar together until light and fluffy.
Add the egg and mix. Sift in the flour, and baking powder and mix to combine.
Line a baking tray with paper. Carefully roll the mixture and cut with cutters or roll into balls and slightly press with a fork to flatten.
Bake for 12 minutes. Let cool completely.
Leave the scoop of ice cream on the bench to slight soften (you will need one large scoop per serving). Chop the chilli flakes until they are a finer mix. Stir the chilli into the ice cream and return to the freezer for 10 minutes.
Place a biscuit on the plate and top with the ice cream. Spread the ice cream out a little. Add another biscuit to the top and dip one side in chocolate flakes. Serve immediately.
