This Whole Baked Snapper using Mrs Rogers BBQ Zesty Sesame Southern Oceans Fish Rub is so yummy and easy to make, that you can bake it any time of the year.

 Whole Snapper, scaled and gutted
 1 Lemon
 2 tbsp Rice Bran Oil
 1/2 cup Shredded Coconut

Heat the oven to 180C°. Use an oven tray big enough to fit the fish. Squeeze the juice of the lemon into a bowl and slice the lemon skin to lye the fish on top. Place the fish on top of the lemon.

Mix the fish rub, lemon juice, oil and coconut together. Spread over the top of the fish and cover loosely with tin foil. Bake until the fish is cooked through and then grill until the skin starts to crisp. Serve!
