Vegetarian Winter Burger ? time! ❄️
Peel and diced the kumara into medium sized chunks. Boil in salted water until soft. Drain and put aside to cool slightly.
Combine the oats, quinoa, black beans, red onion, cumin, oregano, paprika and salt in a large bowl. Add the kumara. Mix until the kumara mashes and combines all the ingredients together. It doesn’t matter if some of the black beans squash in the process.
Stuff the capsicum rings with the kumara mixture and push firmly so that the mixture completely fills the ring. Sprinkle the crusting crumbs on a plate and dip both sides of the capsicum pattie into the crumbs. Push the crumbs into the mixture.
In a frying pan, drizzle a little oil. Place the capsicum pattie into the hot oil. Add the tomato slices. Turn as needed. Fry until the tomatoes are warm and the crumbs are golden.
Prepare your burger bun and layer with toppings. Place a slice of tomato and the capsicum pattie. Add your favourite sauce if you wish.
