In a preheated frypan, add the oil and fry the bacon, mushrooms and any other vegetables until nearly cooked. Beat egg whites in a clean and dry bowl until stiff.
Whisk the baking powder, Kiwi Roast and salt into the yolks to make sure theres no lumps. Fold the yolk mixture into the egg white long with any other ingredients like the cheese (but save a little to sprinkle on top!)
Dollop the egg mixture on top of the bacon mix and place the lid on top. Cook until the egg turns from glossy to matt in colour (which means the egg is cooked). Serve on a plate by folding the omelette in half and sprinkle with cheese.
