Heat the oil in a fry pan over a medium heat. Add the mustard seeds, cumin seeds, fenugreek seeds and chilli flakes and sauté for 1 minute. Add the onion and cook until the onion is starting to caramelise and become translucent.
Add the garlic and cook until it starts to brown. Add the pumpkin, curry leaves and salt and stir to combine. Cook covered until the pumpkin turns into a mash, stirring occasionally.
Once the pumpkin is cooked, finely slice the mint leaves and add along with the lime juice.
