In a frying pan on a medium heat. Add the oil and gently fry the onion until it cooked. Add the ginger and stir through the onion. Add the chicken, carrot, zucchini, mushrooms, 1 tablespoon of the soy sauce and 1 tablespoon of the fish sauce and add 1/2 cup water. Simmer for 5 minutes until the chicken is cooked and the vegetables are starting to soften.
While the chicken is cooking, make the dressing. In a jar or mixer, add the rest of the soy sauce and fish sauce, then the vinegar, sesame oil, sugar, chilli flakes, sesame seeds and shake until blended.
Turn off the heat and add dressing to the chicken. Prepare your lettuce cup and place the chicken mixture inside. Eat and enjoy!
