Welcome to our Kitchen - it’s Guinness Chocolate Brownie time.
In a pot, heat the Guinness to boiling. Reduce the heat, add the vanilla and nutmeg and simmer to reduce the volume to around 1/2 cup liquid. Set aside to cool for 10 minutes.
Preheat oven to 175C and line your pan. Place the butter and chocolate in a bowl and microwave in 20 sec blasts, stirring in between, until the butter and chocolate are melted. Whisk in the sugar. Add the Guinness reduction and stir. Stir in the eggs and then the flour and salt. Stir to completely combine. Pour into the pan and bake for 35 minutes until the mixture is cooked (test with a toothpick or knitting needle). Let cool completely then slice and store in an airtight container.
Blanch the pistachios for 5 minutes in boiling water. Drain and allow to cool. In a food processor or bullet machine, pulse the pistachios until they are smooth with just a few chunks.
In a separate bowl, whip the cream along with the icing sugar, and whip until it starts to thicken and hold its shape. Fold in the ground pistachios.
