125 g Butter, soft
¾ cup Sugar
1 Egg
2 Plain Flour
1 tsp Baking Powder
To Make Chocolate Ginger Biscuits
1 tbsp Cocoa Powder
Ginger Coffee Mousse
Chocolate Ginger Biscuits (see above)
1 cup Pouring Cream
2 tsp Icing Sugar
1 tsp Cocoa Powder
½ tsp Coffee Grounds (fine)

In a bowl add the cream and whip until nearly stiff. Add the sugar, cocoa and coffee and whip until the cream is thick.

On your serving plate, place the biscuit and then top with a generous amount of mousse. Sprinkle a little grated chocolate to decorate.
