In a frypan, on a medium heat, add the oil, mince, bacon and onion and fry until the meat it starting to crisp. Add the carrot and garlic and stir to combine. Add the Mexican Seasoning and stir. Add the rest of the ingredients, stir and cover.
Cook for a further 20-30 minutes on a medium to low heat, stirring every now and then. Taste and add salt and pepper if desired. Serve with pasta or corn chips and top with sour cream and avocado.
