Use as a vegetable based thickener and stabilizing agent in gluten free baking such as breads & cakes, where it can help to retain the structure of the baking, usually achieved by the gluten in wheat flour. Its neutral flavour makes a versatile ingredient in all types of recipes, from thickening sauces & batters to binding ingredients in smoothies.
