Quick Thai Style Satay Sauce or Dip

Rich, creamy, and full of flavour, this satay sauce provides a delicious Thai twist using Mrs Rogers Thai Seasoning. Perfectly balanced and versatile, it’s ideal for dipping skewers, drizzling over noodles, or spooning onto grilled chicken salads.
Ingredients

1/2 cup peanut butter

1/2 cup coconut milk

1–2 Tbsp Mrs Rogers Thai seasoning

2 Tbsp soy sauce

1 Tbsp brown sugar

1 Tbsp lime juice

1/3 tsp Mrs Rogers Garlic Powder, (or 1 clove fresh garlic, minced)

1/8 tsp Mrs Rogers Ground Ginger, (or ½ tsp fresh ginger, grated)

¼ tsp Mrs Rogers Chilli Flakes, optional

Warm water, as required
Directions
Combine peanut butter and coconut milk in a saucepan over medium to low heat, whisking until smooth.
Stir in Thai seasoning mix, soy sauce, brown sugar, lime juice, garlic, ginger, and chilli flakes (if using).
Simmer for 3–5 minutes until thickened, stirring continuously.
Add warm water as needed to reach your desired consistency.
Add extra seasoning as required (it's best to start with less and adjust to your taste preference).
Sauce can be made ahead of time and stored in the fridge.
Recipe Note
Tip - For extra flavour, mix the Thai seasoning with a little oil and heat gently before adding into other ingredients
