Ingredients

  • 1kg lamb mince
  • 1 small onion, grated
  • 1 tsp Mrs Rogers Garlic Powder (or 3 cloves fresh garlic, crushed)
  • 1 Tbsp olive oil
  • 1 ½ tsp Mrs Rogers Ground Cumin
  • 1 tsp Mrs Rogers Smoked Paprika
  • 2 tsp Mrs Rogers Oregano
  • 1½ tsp Mrs Rogers Ground Coriander
  • 1 tsp Mrs Rogers Sea Salt Fine
  • ½ tsp Mrs Rogers Black Peppercorns
  • ½ tsp Mrs Rogers Chilli Flakes, (optional)
  • Mrs Rogers Baking Paper

Directions

  1. Preheat the oven to 180°C. In a large bowl, combine the mince, grated onion, garlic, olive oil, and all the herbs and spices. Mix thoroughly until the mixture is smooth and slightly sticky.
  2. Lay out a sheet of Mrs Rogers Baking Paper and place ½ of the mixture onto the baking paper, spread evenly and make it as thin as possible. Starting from the long side, tightly roll the paper over the meat repeatedly until you form a long log. Twist the ends to secure the roll and hold its shape during baking. Repeat this step for the second ½ of the mixture.
  3. Place the wrapped logs on a baking tray and bake for 30–40 minutes, turning halfway through to ensure even cooking.
  4. Remove from oven and let the doner rest for 5 minutes before carefully unwrapping. Place the unrolled logs back on the tray and return to the oven for 5–8 minutes to make the outside tender and crispy.
  5. Carefully remove from the oven, slice thinly using a sharp knife and serve in warm flatbreads or pita, topped with your favourite salads and sauces.
