Piri Piri Roast Chicken

Love a good roasted chicken? Well you need to try this recipe. This Piri Piri Roast Chicken will become a favourite and will make your food go a lot further as the other half of the chicken is used for other meals! Once devoured, use the bones to make a spicy chicken stock.

Ingredients

  • 1/2 Whole Chicken
  • 5 Tbsp Mrs Rogers Portuguese Piri Piri BBQ Rub
  • 1 cup Unsweetened Yoghurt
  • Mrs Rogers Baking Paper (for lining tray)

Directions

  1. Mix 3 tablespoons of the Portuguese Piri Piri BBQ Rub into the yoghurt. Put the chicken into a container and paint the piri piri marinade all over including the underside. Leave to marinate for at least 4 hours or better still, overnight.
  2. Heat your oven to 190°C. Place the chicken onto a lined oven tray and sprinkle the other 2 tablespoons of Portuguese Piri Piri on top.
  3. Cook for 40 minutes until the skin is browned and the juices run clear from the chicken.
