Cinnamon Afghan Biscuits

Afghan Biscuits are a Kiwi classic, but we've spiced them up a little!

Ingredients

  • 200g Butter, softened
  • ½ cup Sugar
  • 1 ¼ cups Plain Flour
  • 2 teaspoons Mrs Rogers Ground Cinnamon
  • 2 ½ cups Cornflakes
  • ¼ cup Mrs Rogers Cocoa Powder
  • 200g Cooking Chocolate
  • Mrs Rogers Baking Paper (for lining tray)

Directions

  1. Preheat oven to 180°C and line a baking tray with baking paper.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the flour, cocoa powder and cinnamon to the butter mixture and stir until mixed. Add the cornflakes and stir into the biscuit mixture.
  4. On the lined baking tray, place spoonfuls of the mixture and push down until they look like a biscuit shape. Place in the oven for 15 minutes.
  5. Remove from the oven and let cool on the tray. Melt the cooking chocolate in the microwave on short burst, stirring in between. Ice the biscuits with the melted chocolate.
