A premium unsweetened cocoa; beans are roasted and most of the cocoa fat is removed to concentrate its rich flavour, then ground to a luxurious fine powder. It has not been alkalised like Dutch Cocoa, so retains its deep flavour and fruitiness from its natural acidity. It will add texture and a deep chocolate flavour in a variety of applications, working particularly well in recipes leavened with baking soda. An essential ingredient in any chocolatey creations, whether decadent cakes, cupcakes, brownies, desserts or added to coffee for an indulgent mocha or hot chocolate.
