Delicious Zesty Herb Potato Salad

Potato salad is the perfect accompaniment to the good old Kiwi BBQ. This recipe omits the usual mayonnaise, so is a little healthier. A light potato salad with lovely fresh herb flavours & zest lemon.

Yields1 Serving
 Medium Potatoes
 ½ cup Fresh Basil, finely chopped
 1 cup Fresh Parsley, finely chopped
 2 Sticks of Celery, sliced
 1 Red Onion, finely diced
 ¼ cup Quality Olive Oil
 3 tbsp Lemon Juice
 1 tbsp Wholegrain Mustard
 1 tsp Mrs Rogers Oregano
 1 tsp Mrs Rogers Thyme
 Mrs Rogers Salt & Gourmet Pepper to taste

Wash potatoes & cut into eighths, keeping skin on.

Cook potatoes in water until tender, around 6 -10mins,drain thoroughly & set aside to cool.

Put potatoes in a large bowl & add basil, parsley, celery & red onion& stir gently to combine. Whisk together olive oil, lemon juice or vinegar, mustard, oregano, thyme, salt & pepper into a dressing & stir into potatoes.

Add further oil if salad is too dry.

Season with further salt & pepper to taste

An easy salad to make hours ahead, simply refrigerate & bring to room temperature before serving.

HINTS & TIPS; Add chilli flakes as a garnish for extra zing; Use this as a base for your own variation, add bacon, diced egg, or melon or strawberries for freshness.
