Toffee Apple Cake

A deliciously cosy twist on a classic apple cake, featuring our Vanilla Cake Mix. Crisp, sweet apples are baked beneath a soft, golden cake, creating a delicious toffee-like topping as it bakes. Serve warm with a scoop of vanilla ice cream or whipped cream, or finish with the included vanilla icing for an extra sweet treat.

Ingredients
Mrs Rogers Vanilla Cake Mix
150 ml milk
150 ml vegetable oil
75 g butter, melted (optional)
75 ml vegetable oil, (optional for richer taste)
2 size 7 eggs
3 crisp apples, cored and thinly sliced
2-3 tbsp brown sugar
Mrs Rogers Baking Paper, to line the cake tin (optional)
Directions
Preheat the oven to 180°C fan bake. Grease a 20cm springform cake tin with butter or oil and line the base with baking paper.
Arrange the sliced apples evenly over the base of the cake tin and sprinkle with brown sugar. Bake for 15 minutes.
Using an electric mixer, whisk the eggs on high speed until light and fluffy.
Melt the butter, if using, and combine with the milk and vegetable oil. Add to the beaten eggs and mix gently.
Add the 400g packet of dry cake mix and gently mix on low speed until just combined and there are no lumps. Do not overmix.
Carefully spoon the mixture over the baked apples and spread evenly.
Reduce the oven temperature to 160°C fan bake and bake for 50–60 minutes, or until the cake springs back when gently pressed.
The cake may bake sooner if using a different-sized tin. Insert a skewer into the centre of the cake. If it comes out clean, the cake is ready.
Once cooled, turn the cake upside down onto a serving plate so the toffee apples are on top. Delicious served warm with vanilla ice cream, vanilla icing (included in the box) or whipped cream.
