The Viral Dot Cake

Ingredients

• Mrs Rogers Vanilla Baking Mix
• 2 medium eggs
• 150g butter, melted
• 150ml milk
• Mrs Rogers Baking Paper (to line tray)
• Mrs Rogers Vanilla Icing Mix (included)
• 60g butter
• 20ml milk
• Mrs Rogers Natural Sprinkles, to decorate
• Mini jars or cups

Directions

1. Preheat oven to 160°C fan bake or 180°C conventional.
2. In a bowl, whisk the eggs until light and fluffy. Add the melted butter and milk, then mix in the Mrs Rogers Vanilla Base Mix. Fold gently until just combined and smooth, but do not over mix.
3. Pour batter into a lined tray and spread evenly.
4. Bake for approximately 20 minutes, or until golden and a skewer inserted into the centre comes out clean.
5. For the icing, beat the butter and icing mix together on high speed for 1 minute until combined. Add the milk and continue beating on high for around 5 minutes, or until light and fluffy.
6. Once the vanilla sponge has completely cooled, use glass jars to cut out circles by pressing and twisting the jar into the vanilla sponge. Repeat until you have enough sponge rounds, making sure to leave space in each jar for layering with icing.
7. Once the layers are assembled, add a spoonful of icing to fill the jar and spread into an even layer.
8. To finish, dip each jar into a plate of sprinkles to coat.
