Spinach and Feta Gozleme
Filled with spinach, feta and topped with a squeeze of lemon, this cheats gozleme is almost as good as a ticket to Turkey. Almost.

Ingredients
- 1 x Mrs Rogers Dough Baking Mix
- 300g plain yoghurt
- Olive oil
- Block of feta
- 200g fresh spinach leaves
- 2 lemons
- Optional: chilli flakes
Directions
- Empty 300g of the Dough Baking Mix into a bowl and stir in the yoghurt with a spoon. Use some of the remaining dough baking mix to dust a clean kitchen bench top.
- Tip the dough mix onto the bench and knead for a minute or until fully combined.
- Divide into 3 even sized pieces of dough. Dust the bench with dough mix again. Take one of the pieces of dough, use a rolling pin to roll into a thin rectangle, approx. 40cm long and 30cm wide.
- Place a handful or two of chopped spinach in the middle of the dough. Then add crumbled feta. Season with salt, pepper and chili flakes if you like a little heat.
- Fold the dough over to enclose the filling in a rectangular shape, press edges together to seal. Use a knife to cut off any unnecessary dough when folding the sides.
- Preheat a large frying pan to a medium heat. Brush the top with olive oil and place the oiled side in a frying pan and cook for 2 minutes.
- Brush the uncooked side with oil, then flip and cook for a remaining 2 mins. Cut into 6 pieces and serve with lemon wedges.
