Smoky Italian Chicken Tray Bake

The ultimate easy winter dinner, all made on one tray. Packed with hearty seasonal vegetables and tender chicken, it’s an easy way to get more veggies into your weeknight meals. Ingredients

  • 600g chicken thighs or chicken breast, cut into chunks
  • 500g baby potatoes, halved
  • 250g cherry tomatoes
  • 1 red capsicum, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp Mrs Rogers Bags of Flavour Smoked Paprika
  • 1 tsp Mrs Rogers Bags of Flavour Garlic Powder
  • 1 tsp Mrs Rogers Bags of Flavour Italian Herbs
  • ½ tsp Mrs Rogers Bags of Flavour Rosemary
  • Cracked Mrs Rogers Bags of Flavour Black Peppercorns
  • Mrs Rogers Baking Paper (optional, for lining the baking tray)

Directions

  1. Preheat oven to 200°C (180°C fan-forced) and line a large baking tray with Mrs Rogers Baking Paper.
  2. In a large bowl, combine the chicken, potatoes, capsicum, onion, olive oil and seasoning ingredients. Toss well until evenly coated.
  3. Spread onto the prepared tray in a single layer and bake for 30 minutes, turning halfway through.
  4. Add cherry tomatoes to the tray and return to the oven for a further 25-30 minutes, or until the chicken is cooked through and the potatoes are golden.
  5. Serve with salad, steamed greens or rice.
