Slow Cooker Mexican Chicken

Ingredients
- 1kg boneless skinless chicken breasts
- 1 packet of Mrs Rogers Mexican Seasoning (or Mexican Nachos recipe base)
- 1 can Mexican style tomatoes (tomatoes with chillies/jalapeno)
- 250g cream cheese
- 1/2 cup Mrs Rogers Chicken Stock (1 tsp chicken stock powder with ½ cup water)
- 1 tsp Mrs Rogers Garlic Powder
- 1 tsp Mrs Rogers Smoked Paprika
- 2 tablespoons fresh coriander, chopped (optional)
Directions
- Place the chicken breasts in the slow cooker and sprinkle with the Mexican seasoning, garlic powder, and smoked paprika.
- Add the Mexican tomatoes, mix the chicken stock with water and pour over, then blob the cream cheese over the top.
- Cover and cook on low for 8 hours or on high for 3 hours until the chicken is very tender.
- Shred the chicken in the pot using two forks and stir until the cream cheese melts into a thick, creamy sauce.
- Serve over rice or in warm tortillas, garnished with fresh coriander.
