Rice Bubble Slice

Kiwi kids’ favourite, Rice Bubble Slice, is a bit of nostalgia and made with just a few simple ingredients. If you want help lowering the amount you spend at the grocery store, making your own rice bubble slice at home is the way to go. You get many more servings than purchasing pre-packed bars, and without the extra additives. They still contain sugar, but that’s kind of essential for holding them together.
Ingredients

4 cups rice bubbles (or cornflakes)

50g sugar

80g butter

2 Tbsp golden syrup (or honey)

Mrs Rogers Baking Paper (to line)

Mrs Rogers Natural Sprinkles (optional)
Directions
Melt the butter on the stovetop and stir in the sugar and golden syrup, bring to a soft boil and simmer for a minimum of 3–4 minutes.
Place the rice bubbles into a large bowl and pour over the hot mixture. Stir until the rice bubbles are completely coated.
Pour the mixture onto a tray lined with baking paper (approximately 22 x 30cm). Sprinkle Mrs Rogers Natural Sprinkles, free from artificial colours or flavours.
Spread the mixture evenly with a spatula, then press down firmly.
Chill in the fridge for a few hours until set. Store in an airtight container in the fridge for up to one week.
Recipe Note
Tip: For easy grabbing, freeze individual slices wrapped in cling film or tucked into an airtight container. They’ll keep perfectly for up to 3 months!
