Ham & Cheese Pizza Scrolls

With school back just around the corner, these freezer-friendly pizza scrolls are an easy, kid-approved lunchbox win. Simple to make, easy to freeze, and perfect for busy mornings.
Ingredients

2 cups self-raising flour

ยผ tsp Mrs Rogers Salt

2 tsp Mrs Rogers Italian Herbs

90g butter, cut into small pieces

ยพ cup milk (use up to 1 cup if needed)

200g ham (or salami)

1 cup grated cheese

1 egg, whisked with a fork

Mrs Rogers Baking Paper (to line)
ยฝ cup tomato sauce
Directions
Preheat oven to 200ยฐC. Line a baking tray with baking paper or grease a muffin tin.
Place the flour and salt into a large bowl. Add the butter and, using your fingers, rub together until the mixture resembles fine breadcrumbs.
Add the milk and cut through with a butter knife to combine until the dough starts to form.
Tip dough onto a floured bench, knead together, then roll into a rectangle (approximately 20 x 30cm).
Spread the tomato sauce evenly over the dough. Lay the ham on top of the sauce, then sprinkle with grated cheese and Italian herbs. Brush the edges of the dough with a little egg.
With the long side facing you, carefully roll the dough into a log. With the seam side down, cut into 2cm pieces and place onto the tray or into a muffin tin.
Brush the tops lightly with egg and top with extra cheese if desired.
Bake in the hot oven for 15 minutes, or until the cheese has melted and the rolls are golden brown.
Remove from oven and allow to cool for 5 minutes before serving. Scrolls freeze well. Once cooled, transfer to a reusable
zip-lock bag or container.
Recipe Note
-For Hawaiian rolls, add 2โ3 tablespoons of drained, chopped pineapple pieces.
-If you donโt have Italian Herbs, you can use Mrs Rogers Oregano, Thyme, Basil, or Rosemary instead.
-Place into lunchboxes frozen and they will thaw before lunchtime. Alternatively, defrost in the fridge overnight.
