Old fashioned Vanilla Custard Slice

Flaky golden pastry, thick and creamy vanilla custard, and the iconic pink icing on top make this timeless treat as delicious as it is simple to make.

Ingredients
- 2 sheets of puff pastry, thawed
- 1-2 tsp Mrs Rogers natural flavoured vanilla essence
- 1–2 drops Mrs Rogers Red food colouring
- ¼ cup caster sugar
- 2½ cup icing sugar mixture
- 5 tbsp water (add slowly)
- ½ cup custard powder
- 2½ cup milk
- Mrs Rogers Baking Paper for lining tray/tin
Directions
Pre-heat oven to 180°C fan bake.
Place thawed puff pastry sheets on lined trays. Prick all over with a fork. Cover with baking paper and another tray (to keep it flat and crisp).
Bake 20–25 minutes until golden. Cool completely.
Trim the pastry to fit a 20cm square tin. Line tin with baking paper and place one pastry sheet in the base.
Make the Custard
Mix custard powder with ¼ cup milk and vanilla essence until smooth, then add remaining milk, and sugar.
Cook on medium heat, whisking constantly, until VERY thick (custard must be thick or it won’t set). It should be bubbling before you take it off the heat.
Cover custard with plastic wrap and cool for 20 minutes.
Spread custard over pastry. Top with second pastry sheet.
Making the Pink icing
Sift icing sugar into a bowl and add the food colouring.
Add water 1 tbsp at a time until thick but spreadable.
Spread the icing over slice ad then chill 3–4 hours (overnight is best).

Slice gently through the top pastry first, then press down firmly to cut clean slices
