No-Bake Star Anise and Lime Coconut Ice

Remember Grandma’s coconut ice? Or spending all your pocket-money at the school fair on pink coconutty goodness? Revamp a wonderful food memory by adding a little bit of spice to this old-school sweet. Using Mrs Rogers Star Anise, Natural Green food colour and Vanilla Essence, this special treat won’t last long!

Ingredients

  • 2 1/3 cups Icing Sugar
  • 1/4 tsp Cream of Tartar
  • 1 can Sweetened Condensed Milk
  • 3 1/2 cups Desiccated Coconut
  • 3-4 tsps Mrs Rogers Natural Flavoured Vanilla Essence
  • 2-3 drops Mrs Rogers Natural Green Food Colouring
  • 1 Lime, zest and juice
  • 2 Mrs Rogers Star Anise, finely ground
  • Mrs Rogers Baking Paper (for lining tray)

Directions

  1. Line a tin or container approximately 25 x 20cm with baking paper. In a frypan, heat on medium, 1 cup of the coconut until just starting to brown. Set aside.
  2. In a large bowl, sieve the icing sugar. Add the coconut, cream of tartar, lime zest and star anise and stir. Add the condensed milk, lime juice and vanilla essence and stir until completely combined.
  3. Tip half of the mixture into your tin and press down with damp fingers until flat. With the remaining mixture, stir in the green food colouring and mix to combine. Place the rest of the green mixture on top of the other uncoloured mixture and press with damp fingers until flat.
  4. Set in the fridge for 2 hours. Then slice into desired pieces or bars.
