No Bake Ginger Slice

This delicious, simple, no bake ginger slice recipe is full of flavour and so easy to enjoy. It’s the perfect recipe to whip up for a treat when you feel like having something sweet for afternoon tea, without having to go to the effort of baking.

No Bake Ginger Slice

Ingredients

    Base

    • 250g (one packet) Plain Biscuits (arrowroot, superwines or gingernuts for extra ginger flavour)
    • 125g Butter, softened
    • 2 tsps Mrs Rogers Ground Ginger
    • 1/2 Cup Brown Sugar
    • 4 Tbsps Condensed Milk

    Icing

    • 2 Cups Icing Sugar
    • 100g Butter, melted
    • 1 tsp Mrs Rogers Ground Ginger
    • 1 tsp Mrs Rogers Natural Vanilla Essence
    • Mrs Rogers Baking Paper (for lining tray)

    Directions

    1. Prepare a 20cm square tin with baking paper and set aside.

    2. Crush biscuits in a food processor until you have a fine crumb, add to a medium bowl.

    3. Melt the butter in a small microwave proof bowl for 30 seconds or until melted.

    4. In a small bowl add together the melted butter, ginger, brown sugar and condensed milk and stir well to combine.

    5. Pour into the crushed biscuits and mix well.

    6. Spoon the biscuit mixture into the prepared tin and spread out evenly and firmly, pressing into the corners.

    7. Set aside or place in the refrigerator to cool.

    8. While cooling, prepare the icing. In a small bowl, add the melted butter, icing sugar, ginger and vanilla essence and mix well to combine, ensuring no lumps remain.

    9. Spread the icing evenly over the cooled base, you may wish to use a little hot water to get a maker it easier to spread and a smoother finish.

    10. Allow the slice to set in the refrigerator before slicing into bite size pieces.
