Lime & Ginger Glazed Ham

This Lime & Ginger Glazed Ham recipe takes it to the next level, fresh, fragrant, and full of festive flavours. Whether served hot or cold, it’s guaranteed to impress.
Ingredients

3 ½-4kg (Ham on the Bone)

1 cup Brown Sugar

1 ¾ cup White Wine

1/3 cup Dark Soy Sauce

2 Limes, zested and juiced

2 Tbsp Mrs Rogers Ground Ginger

2 tsp Mrs Rogers Chilli Flakes (optional)

4 Mrs Rogers Star Anise

1 Mrs Rogers Cinnamon Sticks

40-50 Mrs Rogers Whole Cloves

Mrs Rogers Brown Baking Paper (for lining tray)
Directions
Preheat the oven to 170°C conventional or 150°C fan-forced.
To make the glaze, add the brown sugar, wine, soy sauce, lime zest and juice, ginger, chilli, star anise and cinnamon into a pot and heat on a low heat until the sugar has dissolved. Bring to the boil and then reduce to a simmer for 10 minutes, stirring occasionally to avoid burning and sticking to the pot until the glaze has thickened.
While the glaze is simmering, prepare the ham by loosening and removing the top layer of skin being very careful not to cut off the fat layer. Score the fat layer by creating a pattern of diamonds (about 5mm deep) using a sharp knife, then push a whole clove into the criss-cross or center of each diamond.
Line a large baking tray with baking paper and place the prepared ham on top with 1 cup of water in the bottom (the water helps prevent the ham from drying out). Brush the ham with 1/4 of the glaze.
Place in the oven and bake for 1½ hours glazing the ham every 20-25 minutes until all the glaze is used and the ham is golden brown and caramelised. You may need to add a little extra water to the dish towards the end of cooking if it has completely evaporated. (Cooking time may vary with smaller or larger hams).
Rest for 15-20 minutes.
It is best to remove the whole cloves before serving, use a fork to gently lift them out. Carve the ham and serve it with the pan juices drizzled over the top or chill in the fridge if serving cold.
