Christmas Trifle

A little bit festive, a whole lot delicious. Made for sharing with family and friends, this Christmas trifle layers light sponge, fresh fruit, creamy custard, jelly and rich Mrs Rogers dark chocolate bits for a dessert that feels special without the fuss. Perfect for celebrating and going back for seconds.
Ingredients

1 litre cranberry or pomegranate juice

1โ2 tbsp sugar (optional, depending on juice sweetness)

20g Mrs Rogers Gelatine Powder

2-3 cups milk

3-4 egg yolks

50g caster sugar

ยฝ cup cornflour

1 tsp Mrs Rogers Vanilla Essence

500g sponge cake (or whip up a packet of Mrs Rogers Vanilla Cake Mix), cubed

Whipped cream

50โ75g Mrs Rogers Dairy-Free Dark Chocolate Bits

Fresh fruits (berries, kiwi, or pomegranate seeds)

Directions
Prepare the jelly:
Heat 500ml of juice and bring to a simmer.
Add the other 500ml of juice to a bowl and add the Mrs Rogers Gelatine Powder and whisk.
Pour in the hot juice and whisk, until the gelatine is fully dissolved.
Pour into a shallow dish and chill until set and cut into cubes.
Make the custard:
Bring to a simmer the milk and ยผ cup sugar.
In a bowl, whisk cornflour, yolks and remaining sugar until smooth.
Gradually pour the hot milk into the egg mixture, whisking constantly. Return to the saucepan and heat gently until thickened. Stir in Mrs Rogers Vanilla Essence. Leave to cool to room temperature.
Assemble the trifle:
In a large glass bowl, layer the sponge cubes.
Add jelly cubes.
Sprinkle a handful of Mrs Rogers Dark Chocolate Bits over the jelly.
Pour over the custard and fruit. Repeat the layers with the remaining sponge, jelly, custard, and fruit until the bowl is filled.
Top & decorate:
Spread whipped cream over the top.
Scatter remaining dark chocolate bits and fresh fruit for a festive finish.
Chill & serve
Refrigerate for at least 2 hours to allow flavours to meld. Serve chilled.
Recipe Note
Tip:
- Always add Gelatine to liquid, not the other way around.
- Add 1 tsp of Mrs Rogers Mixed Spice to your whipped cream (itโs a little touch of magic).
