Gingerbread Cookies

Nothing says Christmas time than a good batch of Gingerbread Cookies! Mrs Rogers Ginger and Mixed Spice provides all the flavour and have fun decorating them with the kids using Mrs Rogers Natural Sprinkles.
Ingredients

250g Butter, softened

1 cup Icing Sugar

1 Egg

ยฝ cup Treacle

4 cups Flour

1 Tbsp Mrs Rogers Natural Cocoa Powder

1 Tbsp Mrs Rogers Ground Ginger

2 tsp Mrs Rogers Mixed Spice

1 tsp Mrs Rogers Baking Soda

ยฝ tsp Mrs Rogers Sea Salt Fine

Mrs Rogers Natural Sprinkles for decorating

Mrs Rogers Brown Baking Paper (for lining baking tray)

1 Egg White

1 ยฝ cups Icing Sugar

ยฝ tsp Lemon Juice
Royal Icing:
Directions
In a large bowl, using an electric beater, mix the butter and icing sugar until light and fluffy. Add in the egg, the treacle and mix. Add the remaining ingredients, sifting the dry ones to remove lumps, and combine into a dough.
Divide the dough into 4 portions, wrap each in cling wrap, and refrigerate for at least 2 hours until firm.
Preheat the oven to 180ยฐC. Knead the chilled dough on a floured surface until workable, then roll to 5mm thick. Cut out gingerbread cookies, place on a lined tray, and bake for 10โ15 minutes or until browned. Cool on a wire rack.
Mix the egg white, sifted icing sugar, and lemon juice until combined. Using a piping bag, add eyes, mouth and other decorations. Stick Mrs Rogers stars and hearts on using the icing. Leave to dry and store in an airtight container.
