Banana Skin Bread

Banana skins are not a common ingredient in cooking but they add an amazing amount of flavour and fibre, great for big and little tummies. This Banana Skin Bread will have everyone coming back for more and they won’t even know there are banana skins in it…until you tell them.
Ingredients

2 whole Bananas, skins washed and ends cut off

2 cups Self Raising Flour

1 tsp Mrs Rogers Baking Soda

1 tsp Mrs Rogers Ground Cinnamon

1 tsp Mrs Rogers Ground Ginger

115ml Vegetable Oil

3/4 cup Brown Sugar

2 large Eggs

1/3 cup Plain Yoghurt

1-2 tsp Mrs Rogers Natural Flavoured Vanilla Essence

Mrs Rogers Baking Paper (for lining loaf tin)
Directions
Preheat your oven to 170°C and line a loaf tin with baking paper.
In a blender, add the banana skins, bananas and oil and blend until the skin is smooth. Add the eggs, yoghurt and vanilla essence, and blend until combined.
In a large bowl add the flour, baking soda, cinnamon and ginger and whisk to combine. Make a well and stir in the wet mixture.
Pour into the loaf tin and bake for 30-40 minutes until cooked, or until a skewer inserted into the center comes out clean.
Carefully remove from oven and let loaf cool in tin for 10 minutes, then remove and place on a wire rack to cool.

Note: This is great to freeze in slices for morning tea on the run.
