Christmas in Germany – Christmas Duck

In Germany for Christmas, Roasted Goose is a very common dish that is served. So if you can find a goose, use it. However, duck is a lot more common in our neck of the world so why not use this German twist and give your dinner table a tasty mid-winter Christmas treat.

 2kg Whole Duck
 2 Mandarins
 1 large tsp Mrs Rogers Chinese Five Spice
 1 rounded Tbsp Mrs Rogers Thyme
 2 Tbsp Honey
 3 tsp Mrs Rogers Sea Salt Fine
 2 Tbsp Oil
 An oven bag

Preheat your oven to 180°C. Wash your duck and remove any giblets. Pat dry with paper towels. Put into the oven bag and onto a baking tray. Slice the mandarins in half and place inside the duck cavity. Set aside.

Combine the Chinese five spice, thyme, honey, salt and oil together to make a thick paste. Pour over the duck and spread over the skin. Tie the oven bag closed and cut a small slit in the top of the bag. This stops it from exploding. Cook in the oven for 2 hours until cooked.

Remove from the oven and let sit for 15 minutes. Carve and serve.
