- Servings
- 24 biscuits
Ingredients
- 1 cup rolled oats
- 140g plain flour, sifted
- ½ cup unsalted butter
- ½ cup raw brown sugar
- 80g desiccated coconut
- 3 tbsp honey
- 1/2 tsp Mrs Rogers Ground Nutmeg
- 1 tsp Mrs Rogers Ground Cinnamon
- ½ tsp Mrs Rogers Baking Soda
- ¼ tsp Mrs Rogers Salt
- Mrs Rogers Baking Paper to line baking tray
- GoodLife Pantry Jars
- 2 tbsp boiling water
Directions
- Preheat oven to 160°C (conventional) or 150°C (fan bake). Line a baking tray with baking paper.
- Add the oats, flour, brown sugar, coconut, cinnamon, and nutmeg to a large mixing bowl. Give everything a good mix and make a well in the centre.
- Heat the butter and honey in a small pot until the butter has melted and the mixture is smooth. Then remove from heat.
- In a small cup, combine the baking soda with the boiling water. Once it starts to fizz, pour it into the warm butter mixture and stir to combine.
- Add the mixture to the dry ingredients until all ingredients are well combined and a thick dough forms.
- Scoop out tablespoon-sized portions, roll into balls, and place them on the tray. Allow room (about 5cm) space between each one for spreading. Press down lightly with your hand or the back of a fork.
- Bake for 12–15 minutes, or until golden around the edges.
- Allow to cool and store in GoodLife Pantry Jars for up to 1 week.
