Home-made Tomato & Basil Pasta Sauce

A fresh & versatile base sauce that is perfect for Pasta, Lasagne, Meatballs, Bolognese & a perfect sauce for Pizza bases. Slow cooking helps to concentrate those delicious fresh flavours.
Ingredients

1 kg Ripe Tomatoes

2 Onions

3 Cloves of Garlic, crushed (more or less to taste)

¼ cup Extra Virgin Olive Oil

1 cup Tomato Paste

1 tbsp Mrs Rogers Italian Herbs

2 Mrs Rogers Bay Leaves

1 cup Finely chopped fresh Basil Leaves (more or less to taste)

1 tbsp Sugar

1 tsp Mrs Rogers Sea Salt & Pepper
Directions
Heat oil in a large saucepan on medium heat.
Finely dice onions and add to pot with crushed garlic. sauté for at least 10 mins without browning until onions are softened.
Add finely diced tomatoes, tomato paste, Italian Herbs, Bay Leaves, sugar & salt, stir to combine, cover & simmer on medium-low heat for 1 hour, stirring occasionally. Sauce should be thick, if still watery, simply keep cooking, uncovered for another 15-30mins until thick.
Add basil Leaves & pepper & cook for a further 10 minutes, taste & add extra seasoning to taste.
Pour hot into sterilized preserving jars or let cool and freeze in meal sized portions. Leave sauce chunky. HINTS & TIPS; Add 1/2 Cup red wine for extra rich depth of flavour; Blanch tomatoes in a pot of boiling water & refresh under cold water to peel off skin for a smooth sauce; Add Mrs Rogers Chilli Pieces for extra heat & spice.
