Chicken & Nectarine Summer Salad

Ingredients

400 grams Chicken Breast, sliced

4-5 tsp Mrs Rogers Moroccan Seasoning
- 3 Nectarines (or peaches), pitted, rinsed and sliced

1 tbsp Olive Oil
- Lettuce leaves (Gem/Romaine/Butter), rinsed, and torn in half or chunkily cut

3/4 cup Cucumber, diced or sliced

3/4 cup Red Cabbage, finely sliced

1 cup Blueberries, rinsed

1/4 cup Almonds or Cashews, diced (optional)
- 50 grams Feta, crumbled

1/3 cup Fresh Mint Leaves, torn
- Sprinkle of Sunflower seeds (optional)

2 tbsp White Wine Vinegar

1 tsp Honey
-
½ tsp Dijon Mustard

⅛ tsp Mrs Rogers Garlic Powder (or ½ Clove fresh garlic)

½ tsp Mrs Rogers Salt

¼ tsp Mrs Rogers Black Pepper

¼ cup Olive Oil

Directions
- Make the dressing: In a large serving bowl, combine the vinegar, honey, mustard, salt, black pepper and garlic. Gradually whisk in the olive oil. Set aside.
Thinly slice the chicken and add to a medium bowl, sprinkle over the Moroccan Seasoning and stir to coat.
- Pour the olive oil onto a pre heated pan or BBQ and place the chicken pieces in batches until seared and cooked through, turning once, remove, cover with foil and set aside.
Using the same pan, place in the nectarine slices for just a few minutes on each side until seared with colour and caramelised slightly, turn once and set aside.
Roughly chop the lettuce and scatter into a bowl, add diced or sliced cucumber, finely sliced cabbage and sprinkle over the blueberries
Add seared nectarine slices & chicken, scatter over the chopped almonds or cashews (if using), then finish off with crumbled feta and scatter mint and sunflower seeds over the top of everything.
- Lightly pour over the honey mustard dressing to your taste.
Recipe Note
- Can be served warm or cold (refrigerate covered until required).
- Swap feta out for your favourite cheese, try camembert, blue, mozzarella or goat cheese.
- If you cant find Nectarines they can be swapped for peaches or plums.
- Swap the chicken breast for tender rotisserie chicken and simply leave out the Moroccan seasoning, it will still taste fresh and full of flavour.
- Mint leaves can be changed out for basil.
