Pipi Fritters

We all have fond memories of family and friends, and many times these are #foodmemories. The kitchen is the heart of the home, where food is created for those we love. This is one of those wonderful food memories we are sharing with you.

 1kg Pipi’s, in shell. This recipe works for both Tuatua and Toheroa (note, you will need a permit to collect Toheroa).
 1/2 small Onion
 1 Egg
 1 tsp Mrs Rogers Parsley
 1/2 tsp Mrs Rogers Curry Powder
 1/2 tsp Mrs Rogers Medium Grinder Sea Salt
 A good grind of Mrs Rogers Medium Grinder Gourmet Peppercorns
 2 tsp Flour
 Butter to fry

Lightly steam open Pipi’s until they just open. Remove the pipi meat and discard the shells.

In a food processor, add the pipi’s, onion, egg, parsley, curry powder, salt and pepper and process until the pipi’s are roughly chopped. Add the flour and pulse until just mixed. The mixture should be runny but if in doubt, test one fritter and add more flour is needed.

Heat the butter in a frying pan on a medium heat and drop spoonfuls of the mixture in. Move the pipi meat around in the fritter so that it’s even as it cooks. Flip the fritter over and fry until just golden. Serve with fresh lemon wedges.
