Orange and Thyme Marmalade

This wonderful Orange and Thyme Marmalade recipe makes just one jar. So there’s no need to go through the preserving process because one jar will go really quickly!

 2 large Oranges
 2 cups Water
 2 cups Sugar
 1 tsp Mrs Rogers Thyme

Wash the oranges and cut the tops on bottoms off. Slice into 8 pieces and remove and seeds. In a blender, place the orange pieces and some of the water. Blend until most of the skin has blended.

Place the blended orange and the rest of the water in a pot. Bring to the boil and add the sugar. Reduce the heat to a slow boil. Continue to boil, stirring occasionally. Place a plate in the freezer and leave for 10 minutes. Use the plate to test if the jam is ready by placing a small amount on the plate and drawing your finger through it. If the jam feels sticky and you can see where your finger has made a line, then it’s ready. Pour the jam into a jar and keep in the fridge.
