Feta, Parsley, Prawn and Pea Frittata

This Feta, Parsley, Prawn and Pea Frittata can be served hot or cold. It can be an easy dinner or take it to the park for a yummy picnic. It can also be made in a square dish and cut into small bite-size pieces for an easy entertaining nibble.

 2 medium Potatoes
 1 Spring Onion, sliced
 50g Spinach Leaves
 100g Frozen Peas
 100g Prawn Meat
 2 tsp Mrs Rogers Garlic Powder
 3 Tsp Mrs Rogers Parsley
 6 Eggs
 1/2 cup Milk
 2 tsp Mrs Rogers Sea Salt Medium Grinder
 200g Feta
 50g Capers

METHOD
Step 1
Preheat oven to 200°C. Grease an ovenproof dish with a little oil. Pierce the potatoes all over and cook in the microwave for 4 minutes. Leave to cool and slice thinly.

Step 2
In a large bowl, combine the spring onion, spinach leaves, peas, and prawn meat and stir. In a separate bowl, combine the garlic, parsley, eggs, salt, and milk and stir to combine.

Step 3
Layer one of the potatoes on the base of the ovenproof dish. Add half of the pea and prawn mix on top and sprinkle half of the feta. Add the rest of the potatoes and repeat with the rest. Pour the egg mixture over top carefully. Sprinkle the top with the capers. Bake for 30-35 minutes until the egg mixture is cooked.
