Watermelon Rind Relish

Yes it’s true! Use the watermelon rind to make a really sweet and spicy relish. This Watermelon Rind Relish will add flavour to any cheeseboard, wrap or as a chutney with chicken and the best thing is, it’s using a part that we normally throw away.

 1kg Watermelon Rind
 1/2 cup Apple Cider Vinegar
 3/4 cup Sugar
 1 tsp Mrs Rogers Ground Ginger
 1/2 Tsp Mrs Rogers Chilli Flakes
 1/2 tsp Mrs Rogers Garlic Powder
 1/2 tsp Mrs Rogers Sea Salt Fine
 1/4 tsp Mrs Rogers Black Peppercorns Medium Grinder, set to coarse

After the flesh of the watermelon has been eaten, peel the skin off the watermelon and cut into small cubes or grate in a food processor.

In a large pot, add the watermelon and the rest of the ingredients and stir over a medium heat until the sugar has dissolved.

Reduce to a simmer and cook uncovered, stirring occasionally, for 40-50 minutes until the mixture is tender and the liquid is syrupy. Cool and store in a re-used jar in the fridge for up to 1 month.
