Vegan Fig and Mushroom Pizza

Don’t bag it until you’ve tried it! Believe it or not, cheese is not always required and when you have flavours like this Fig and Mushroom Pizza, you just won’t need it!

 2 1/2 cups Plain Flour
 1 tsp Mrs Rogers Pink Himalayan Fine Salt
 3 tsp Mrs Rogers Mixed Herbs
 2 tsp Caster Sugar
 2 sachets Mrs Rogers Dried Yeast
 1/3 cup Olive Oil
 1 cup Warm Water
Topping:
 2 Figs, sliced
 Medley of mushrooms
 Caramelised Onion Chutney
 A handful of Rocket

In a large bowl, mix the flour, salt, mixed herbs, sugar, and yeast together. Make a well and add the oil and water. Stir to combine and then knead for 10 minutes. Set aside covered for 30 minutes to rise.

Preheat the oven to 210°C. Roll out dough with either a rolling pin or push with your hands and use to make a pizza shape. Paint with the caramelised onion chutney and cover with the sliced figs and mushrooms. Cook for 15-20 minutes until the base is golden.

Remove from the oven and top with the rocket before slicing snd serving. Enjoy!
