Turmeric Granola

This Turmeric Granola is the perfect addition to your morning porridge or sprinkled on top of your berries and yoghurt. Using Mrs Rogers Turmeric, Vanilla Seeds and Cardamom, it won’t last long in the cupboard!

 1.67 cups Rolled Oats
 0.67 cup Brazil Nuts, chopped
 1 cup Almonds, chopped
 0.50 cup Pumpkin Kernels
 0.50 cup dried Cranberries
 5 tbsp Coconut Oil, melted if needed
 2 ripe Bananas
 0.33 cup Maple Syrup
 1-2 tsp Mrs Rogers Turmeric Powder
 1/2 Mrs Rogers Vanilla Pod, seeds removed for use
 0.25 tsp Mrs Rogers Cardamom Seeds

Preheat the oven to 200C and line a baking tray.

Combine the oats, nuts, pumpkin kernels and cranberries in a large bowl.

In a blender or bullet mixer blend the coconut oil, bananas, maple syrup, turmeric, vanilla seeds and cardamom seeds until smooth.

Pour the banana mixture over the oats mixture and stir until combined. Spread the mixture over the baking sheet until it’s even. Put in the oven. Cook for 10 minutes and stir. Cook for a further 10 minutes until the granola is golden in colour. Allow the granola to cool completely before breaking up. Store in an airtight container for up to 1 month.

Serve with yoghurt and berries. Yum!
