Spiced Nut Brittle

Here’s an idea! Freak the kids out by showing them just how sweet treats were made in the ‘olden days’. This Spiced Nut Brittle is perfect for everyone to enjoy and add whatever nuts you have!

 2 cups Sugar
 1 cup Glucose Syrup
 1/4 tsp Mrs Rogers Sea Salt Fine
 1/2 tsp Mrs Rogers Organic Nutmeg Ground
 1/2 cup Water
 1/2 tsp Baking Soda
 2 1/2 cups Nuts

Line or grease a large baking tray. In a large pot on a medium heat, add the sugar, glucose syrup, salt and water and stir to combine.

Stir constantly until the sugar has dissolved. Using a candy thermometer, slowly bring the mixture to the boil. Stir occasionally just to make sure the mixture isn’t burning. The mixture needs to get to 145°C.

Remove from the heat and stir in the nuts, nutmeg and baking soda. Pour over the tray and set aside to cool. Break into pieces once completely cooled.
