Spiced Christmas Bubble Log

 125 g Butter
 2 tbsp Honey
 1/2 cup Brown Sugar
 3 Rice Bubbles
 1 cup Coco Pops
 1 tsp Mrs Rogers Ginger
 1/4 tsp Mrs Rogers Mixed Spice
 1/2 cup Coconut (optional)
 Red and Green Food Colouring (optional)
 Mrs Rogers Sprinkles

Divide the coconut into 2 bowls and stir a few drops of food colouring into each so that you end up with red coconut and green coconut.

In a pot, melt the butter, brown sugar, honey, ginger and mixed spice. Bring to the boil for 3-5 minutes depending on how soft you want the slice to be.

Combine the Rice Bubbles, Coco Pops, and colours coconut in a large bowl. Stir to combine. When the butter mixture is ready, pour over and stir to cover all the ingredients.

Tip out into a greased cake tin or baking dish and press down slightly. Sprinkle Mrs Rogers Sprinkles on top and press down firming with a glass or spoon.

Set aside to cool. Cut when still warm or use a bread knife.
