Spiced Apple Cake

This Spiced Apple Cake not only looks impressive, but it's easy to make and is perfect for any day of the week!

 2 Apples, peeled, cored and cut into fine wedges
 2 tbsp Lemon Juice
 125 g Butter at room temp
 140 g Golden Caster Sugar
 3 Eggs, beaten
 75 ml Milk
 225 g Plain Flour
 2 tsp Baking Powder
 ½ tsp Mrs Rogers Fine Sea Salt
 1 tsp Homemade Speculaas Spice using Mrs Rogers spices
Topping
 1 ½ tbsp Demerara sugar (or brown sugar)
 ½ tsp Homemade Speculaas Spice using Mrs Rogers spices
 Whipped cream or ice cream to serve

Heat oven to 170C. Butter and line with baking paper a 23cm round cake tin.

In a bowl, put apple wedges and lemon juice and toss to coat so they don't brown.

In a large bowl beat butter and sugar until pale and fluffy (this is what gives every cake it's soft light texture) and well creamed. Add eggs and beat until smooth. Sift in flour, baking powder, salt and Speculaas Spice Mix and mix well.

Slowly add the milk, mixing well after each addition, until you have a smooth batter.

Pour the mix into the cake tin and smooth the top. Push the wedges of apple narrow edge down in a spiral around the tin finishing with a tight curl in the centre. Mix the sugar and Speculaas Spice Mix together and sprinkle on the top.

Bake for 35 - 40 minutes, until a skewer comes out clean. Remove from oven and cool for 10 - 15 minutes, then run a knife around the sides, and remove from tin.
Serve warm with whipped cream or ice cream and a drizzle of maple syrup.
