Speculaas Ginger Cookies

These Speculaas Ginger Cookies are so tasty, even the kids will love them. They are perfect for any day of the week but you could have two on a Saturday!

 250 g Butter, softened
 1 cup Icing Sugar
 1 Egg
 ½ cup Treacle
 4 Plain Flour
 1 tbsp Dutch Cocoa
 1 tbsp Mrs Rogers Ginger Ground
 2 tsp Homemade Speculaas Spice Mix using Mrs Rogers spices
 1 tsp Baking Soda
 ½ tsp Mrs Rogers Fine Sea Salt

Preheat oven to 180C. In a large bowl, use an electric beater to mix the butter and icing sugar until light in colour and fluffy. Visit https://mrsrogers.co.nz/recipes/speculaas-spice-mix/ to learn how to make the Specula's Spice Mix.

Add the egg and mix well. Add the treacle and mix well.

Add the rest of the ingredients and mix well making sure to scrape down the sides so that all the ingredients are mixed.

Divide the mixture into 4 and wrap each in cling wrap. Place into the fridge for at least 2 hours to cool. You can freeze some of the mixture at this point to use for later.

On a lightly floured surface, roll out the dough until 5mm thick and cut with desired cookie cutters. Place onto a lined baking tray and bake for 10-15 minutes until just going brown at the edges. Transfer to a cooling rack after sitting for 5 minutes on the baking tray.

Decorate once completely cool or serve as is.
