Pat the chicken pieces with paper towels until dry. In a large bowl, mix the egg and buttermilk together and soak the chicken pieces for 30 minutes in the fridge (you can leave overnight if you wish).
Heat up the deep fryer 170C. Pour half of the southern style chicken coating into a flat dish or plate. Lift out the chicken from the milk and egg mix and dip into the the mix, coating it completely. For an extra crunchy coating, re-dip the chicken into the milk and egg mixture and coat again with the coating. Add more southern style coating as needed. Deep fry the chicken pieces in stages, turning occasionally for 15 minutes until the chicken is cooked. Serve hot!
