Seafood Roast

 1 large Kumara
 3-4 Potatoes
 6 small Corn Cobs
 12 Prawns
 12 Green Lipped Mussels
 150g Butter
 1 1/2 Tbsp Mrs Rogers Black Label BBQ Zesty Sesame Southern Oceans Fish Rub
 1 Lemon, sliced

Pre heat the oven to 180°C. Cut the kumara into large chunks and make a criss cross but not all the way through. Slice the potatoes in half longways and then small slices so that the slices don’t go all the way through to the bottom of the potato. Place the kumara, potatoes and corn into a roasting dish. Roast in the oven for 20-30 minutes until they start to brown and open.

Butterfly the prawns by cutting through the back and remove the vein. Wash the mussel shells and remove the whiskers. Melt the butter in a small bowl in the microwave and add the Zesty Sesame Southern Oceans Fish Rub. Stir to combine. Remove the vegetables from the oven and place the prawns and mussels in amongst them. Turn the oven up to 200°C. Evenly drizzle the butter and Zesty Sesame Southern Oceans Fish Rub mixture over all of the roast. Return to the oven and cook for a further 10-15 minutes. Add the lemon slices and serve.
