Rich Dark Chocolate Truffles

 250 ml Cream
 1 tbsp Unsalted Butter
 250 g Good quality Dark Chocolate, around 70% Cocoa - broken into small pieces
 A splash of Cointreau
 1 tbsp Finely grated orange or manderin zest
 ½ tsp Mrs Rogers Ground Cardamom
 A small pinch of salt to bring out the flavours

Cardamom is an aromatic spice and the quantity you need for this recipe will depend on your personal taste. Add half a teaspoon, taste, add more if you desire.

Half fill a medium pot with water and bring to the boil. Put a smaller pot inside the larger pot being careful the water does not overflow. Turn the heat down to medium so the water is just simmering and not bubbling. Pour the cream into the small pot and heat until steaming. Add in the butter, zest and Ground Cardamom and stir until butter is melted. Add in chocolate pieces and stir until all chocolate is melted and mixture is smooth, taste the chocolate mixture and add further Cardamom and a splash of Cointreau to taste.

Stir, pour into a bowl and pop in the fridge for 2 hours until set.

Fill a teacup with warm water to keep a teaspoon warm as you scoop out the indulgent chocolate.

Roll the chocolate in your hands to form balls and roll in chocolate sprinkles or cocoa powder.

For a decadent treat with a bit of bite, remove the orange zest from the recipe and swap the Cardamom for Mrs Rogers Cayenne Pepper or Mrs Rogers Chilli Pieces.

Add the spice gradually and taste the mixture until you have the desired heat.

Swap your Cointreau for a splash of Brandy.
