Pear and Cinnamon Gluten Free Loaf

You don’t have to be gluten free to try this recipe. It is the perfect replacement for a tea cake. Just imagine serving this slice warm with butter along with a cup of tea. What a yummy afternoon treat.

 3-4 Pears, grated
 1/4 cup Rice Bran Oil
 2 Eggs
 1/2 cup Milk
 1 1/2 cups Gluten-Free Self Raising Flour
 1 1/4 cups Brown Sugar, packed
 1/2 cup Coconut Flour
 1/2 cup Hemp Flour
 3 tsp Mrs Roger Cinnamon Ground
 1 tsp Mrs Roger Nutmeg Ground
 1 Pear, finely sliced for decoration
 1 Tbsp White Sugar

Preheat oven to 160°C. Line and/or grease a loaf tin. In a bowl combine the grated pear, oil, eggs and milk and stir.

In a larger bowl, combine the flour, brown sugar, coconut flour, hemp flour 2 teaspoons of cinnamon, and the nutmeg and mix. Make a well in the centre and pour the pear mixture in. Stir until just combined and pour into the loaf tin. Bake for 1 hour.

Mix the last teaspoon of cinnamon with the white sugar. Place the sliced pear along the top of the loaf and sprinkle the cinnamon sugar on top. Bake for a further 15 minutes until the slice loaf is cooked. Let cool for 10 minutes in a pan. Remove and slice warm with butter if desired.
