Kūmara and Bean Vegan Burger

You certainly don’t need to be Vegan to enjoy this Kūmara and Bean Vegan Burger. With a tasty combination of Mrs Rogers Curry Powder, Coriander and Cumin, these burger patties will be sure to impress.

 700g Kūmara, peeled and diced
 1/3 cup Quinoa, cooked
 1 cup Rolled Oats
 1 can Black Beans, rinsed and drained
 1/2 cup Rocket
 1 small Red Onion, finely diced
 2 tsp Mrs Rogers Curry Powder
 1 tsp Mrs Rogers Ground Coriander
 1 tsp Mrs Rogers Ground Cumin
 1 tsp Mrs Rogers Sea Salt Fine
 Oil for light frying
 Burger Buns
 Lettuce, Sliced Tomatoes, any of your favourite burger fillers
 Caramelised Onion or your favourite sauce

Roast the sweet potatoes on an oven set to 180°C until cooked.

Mix the kūmara, quinoa, oats, beans, rocket, onion, curry powder, coriander, cumin and salt together until the kūmara holds all of the ingredients together. Form into patties and chill for 30 mins. Heat a drizzle of oil in a frying pan and fry until slightly crispy.
